Para sailing takes a motor driven boat, so I dont think thats considered eco friendly. But you can rent sail boats there.
Join like a clean the beach type program. Use public transportation to get there too! Not sure if the keyes have a seperate public bus system but you could take a bus down there at least and then bike around the areas, or roller blade.
